You're A Peach, Brown Butter Peach Pie


There is just something about a peach in summer that is just so perfect, when you bite into a fresh peach and the juice runs down your arm, it just tastes like the summer time. Fresh summer fruit is the highlight of this cute lil' pie and paired with brown butter, nothing says good bye to summer any better.

now let's get to the important stuff... pie making

 

Brown Butter Peach Pie

Crust:

3 c flour

1 stick brown butter, cold & cubed

TT salt

2/3 c ice water

Peachy Goodness:

6 peaches, peeled & sliced

1/2 c brown sugar

1/4 c maple syrup

1 T cinnamon

TT salt

3 T corn starch

1/4 c flour

3 T butter, cold & cubed

  1. brown the stick of butter in a pan until it begins to bubble and smell delicious, approximately 2 minutes, pour into a cup and chill until solid. I put mine in the freezer for an hour because I am impatient.

  2. pour in a bowl, or food processor, the flour and cold browned butter and process them until the butter is the size of peas. pinch in the salt and add water until the pie dough comes together, you may need more or less water here so go easy. Once it comes together divide the dough into two and wrap 'em up. place them into the fridge until you're ready to use them.

  3. while the dough chills, heat the oven until 350F and begin to wash, peel, and cut the peaches. add the rest of the pie ingredients, besides the cubed butter, to a bowl and toss together.

  4. roll the dough out to fit the pie pan and fill it up to the brim with the peachy goodness, cover with cubed butter and top with the remaining pie dough.

  5. bake for 1 hour and resist starring at it bake through the oven door

  6. Once the filling is bubbly and the crust is golden brown remove it from the oven and let it rest for as long as you can stand and enjoy!
